I'm delighted to see Cáis Gabhair Arann is well and truly up and running. I first spoke to Gabriel Faherty a few years back and was really impressed with his ideas and determination in getting his business off the ground. Starting a farm-to-fork food business is a huge challenge anywhere, but must have had particular logistical issues when located on an island. However, this idea is particularly well thought out in that it uses all of the assets available - Gabriel produces milk from his own herd of goats, makes cheeses that are clearly identifiable as being produced on the Aran Islands and perhaps most notably a visitor centre which should add a very substantial additional element to the business, particularly during the summer months.
